A new recipe to show off our very versatile OVEN READY. How does it sound with truffle potatoes?
The basic steps to getting perfect, crisp suckling pig at home are obvious:
- Buy an OVEN READY quarter of a suckling pig or a rack roast (www.alhornoypunto.com)
- Preheat the oven to 200°C and when it is hot put in the meat without removing it from its heat-resistant bag.
- Place the bag in the middle of the oven, so that it roasts on both sides. Leave it to cook for 2 hours. (Note: Don’t worry when the bag inflates inside the oven!)
- After this time, take the bag out of the oven, open it carefully so the juice does not spill, and place the roast on a serving dish.
Use the two hours’ cooking time to prepare the truffle potatoes.
Wash and peel the potatoes. If you wish, you can shape them any way you like. Place them in an earthenware dish and season with salt and pepper. Cover them with butter, oil and one of the black truffles cut into slices. Place in the oven with the suckling pig that is already cooking and leave the potatoes to roast for approximately half an hour. Take the potatoes out of the oven, drain off the oil and serve them on a plate or a piece of slate as we did.
Before serving, grate the other truffle on top. No one will be able to resist that delicious aroma!

- 1 Kg of small, top-quality potatoes
- Olive oil to cover the potatoes
- 2 truffles
- Salt
- Pepper

OVEN READY Rack Roast with Truffle Potatoes

- 1 pack OVEN READY
- 1 Kg of small, top-quality potatoes
- Olive oil to cover the potatoes
- 2 truffles
- Salt
- Pepper
Instrucciones
Preheat the oven to 200ºC.
Place the OVEN READY pack in the middle of the oven and cook for 2 hours.
Wash and peel the potatoes (if you are using different sized potatoes, shape them with a knife until they are all the same size and shape)
Place the potatoes in an earthenware dish and season with salt and pepper. Cover with the butter, oil and one of the truffles cut into slices.
Place in a 180⁰C oven and roast with the suckling pig for the last half-hour.
After this time, remove from the oven and drain the oil off the potatoes.
Open the bag and pour the juice into a gravy boat to serve with the roast.
Serve the suckling pig with the potatoes and grate a black truffle over them.
